Recipe of the Week: Dan Dan Noodles

For something a little different, we’re looking to start sharing food recipies The Gateway Report journalists have enjoyed.

Today’s recipe is something myself and my husband cooked up over the weekend – Dan Dan Noodles, a Sichuan Recipe you can easily do at home!


Sauce: Mix 3 tbsp soy sauce, 2 tbsp black vinegar, 2 tbsp sesame paste or peanut butter, 1 tbsp chili oil, 1 tbsp ground Sichuan peppercorns, 1 tsp sugar, 1 clove minced garlic, 1 tsp minced ginger, 1 tbsp Shaoxing wine, and 2 tbsp hot water.

Meat: Brown 200g ground pork in 1 tbsp vegetable oil; season with 1 tbsp soy sauce, 1 tsp Shaoxing wine, and ½ tsp five-spice powder.

Noodles: Cook 250g thin wheat noodles; blanch ½ cup bok choy.

Assemble: Divide sauce into bowls; add noodles and meat. Garnish with chopped green onions, crushed peanuts, and bok choy. If the sauce is difficult to mix, add a small amount of reserved noodle water. Mix and enjoy!
